Join Brick Bistro Bar for the perfect Sunday afternoon featuring an eclectic three course menu plus matching wines.

Menu will be created by new head chef Callum Weir.

Callum Weir

Callum has over 14 years’ experience in the industry, trained under well-known restaurateurs Martin Benn (Sepia, Sydney), Damien Pignolet (Bistro Moncor, Sydney) & Steven Snow (Fins, Kingscliffe). He has also worked various senior roles in hatted fine dining restaurants, classic French bistros, tapas bars & Asian fusion venues around Sydney, Brisbane & the Gold Coast. Focusing on using locally sourced sustainable produce, Callum brings his passion, innovation & knowledge for food that will take Brick to the next level.
